Late Night Spicy Chicken Wings (Kebab Free)

Oven-baked Spicy Chicken Wings

Okay, this will not be featured on any fine dining menu. It is not the most adventurous and intricate piece of cooking, no fancy ingredients and mammoth skills required. Yet it is food like this that we all craved for when we are a little bit drunk, after a good night out with friends, don't we all? I'm sure I'm not alone here in saying that even when stumbling out of a pub and waddling down the side street on the way home in the middle of the night, greasy fast food and takeaway kebab just don't tempt me the slightest bit. Not that I am a food snob, I did had my fair share of takeaways in the past (bad times), but somehow, even when tipsy these days, I still require something that is delicious and doesn't come with a enough oil to cause internal combustion immediately after.

As you all know, I am slightly partial to a bit of fried chicken, one of my many guilty pleasures. It rank quite highly up there with Spam...ooh..I do like a bit of spam. Anyhow, this is a quick and easy recipe that can be achieved without too much of an effort, perfect for when your hand-mind coordination are not at it's finest. Coat the chicken wings in the aromatic spicy seasonings, pop into the oven and a delicious and healthier version of your local greasy fried chicken appears right before your very eyes. Believe me when I say this is yummy. You might doubt my beer-goggled senses but I have made this many a times without any drinks involved and guess what? Still delicious! This is equally good to take along for a picnic.

(Serves 4)
Ingredients


12 chicken wings, cut into half at the joint so you get a drumlet and wing (see photo below)
3 tbsp good quality curry powder
1 tsp ground turmeric 
1 tsp cayenne pepper (more if you like it spicy)
1 tbsp onion granules or powder
1 tsp garlic granules or powder
1 tbsp sea salt
2 tsp freshly ground pepper
150g plain flour


Method


Preheat the oven to 190ºC. 


Combine all the seasoning ingredients in a large bowl and mix well. Cut the chicken wings in half at the joints and put into the bowl. Rub the spicy seasoning all over the chicken pieces to coat well. You can also do this is a zip seal bag to make life easier.


Lay the chicken pieces on a roasting tray in a single layer, do not overlap. Pop into the oven for 15 minutes


After this time, take the tray out of the oven and turn each pieces over. Pop back into the oven to cook for another 15-20 minutes, until the chicken is golden brown and cooked through.


 Serves immediately.
